The Opón-Carare language belongs to the Cariban language family, spoken in the department of Santander, Colombia. It has two dialects: Opone and Karare.
Karare was founded on the quest for exceptional coffee, drawing on the high-quality flavors of the mountains of Santander and the passion shared by four families with roots in the region.
The Mosto process is a coffee fermentation method that uses liquid from a previous coffee fermentation full-cherries batch — called mosto — to influence flavor development in a new batch after the coffee is depulped.
In fragrance and aroma, notes of caramel and honey are perceived. On the palate, notes of caramel, peach, and panela highlight, and it has a pleasant aftertaste. The acidity is medium with citrus notes. The mouthfeel is clean and delicate.
