This Papayo undergoes a carefully controlled semi-washed process, beginning with fermentation of the whole cherry before depulping and a second fermentation.
The coffee is then washed and slowly dried, preserving the variety’s delicate floral aromas, vibrant fruit character, and clean, balanced sweetness.
